The Origin of Atlantic City Boardwalk Style Salt Water Taffy …another American-First!

In 1883 a candy maker on the original Atlantic City Boardwalk was offering his new candy creation called “taffy”. Sales were dismal when an August storm unexpectedly sprayed ocean salt water over his stock. Instead of throwing his “taffy” away, the innovative candy maker changed the name of his creation to “Salt Water” Taffy and sales boomed! Although “ocean salt water” is not an ingredient in our product, a pinch of salt is added to maintain the wonderful title – “Salt Water Taffy”!

Salt Water Taffy was first cooked in small 10 to 25 pound batches in copper kettles over open fires. The batch was then cooled on marble slab tables and then pulled from a large hook on the wall. Pulling taffy is designed to aerate the candy confection. The candy maker would first hang the batch of cooled taffy from the hook and would then stretch the taffy to 5 or 6 feet from the hook. The puller would then loop the taffy back over the hook, folding itself and trapping air between the two lengths. This aeration process helps to keep the taffy soft. The pulled taffy was then hand rolled on the marble slabs and cut with scissors into approximately ¼” diameter by 2” length pieces. Finally the candy confection was hand wrapped in wax paper with twist ends. Equipment was developed in the early 1900’s to pull, cut & wrap the sweet chewy treats!

The Florida Candy Factory, Inc., is an authentic manufacturer of the original “gem of the Atlantic City Boardwalk” salt water taffy formulation, however without the transfat & soy! This “old fashioned” formulation is believed to provide the most desired taste and texture of any of the salt water taffy recipes being manufactured today. To preserve the integrity and quality of the original formulation our taffy is cooked in small batches, utilizing “non high fructose” corn syrup, pure Florida cane sugar, organic palm oil, sunflower lecithin & natural & artificial flavoring. After cooking, our experienced candy maker cures each batch for 24 to 48 hours in a temperature controlled hot room. After curing, our taffy is pulled, flavored, then cut & wrapped on vintage early 1900’s Rose cut & wrap machines. Each batch receives the undivided attention of our candy maker, who inspects and accepts only the highest quality product.

We’re proud to have maintained the authenticity of the Atlantic City Boardwalk recipe while making it healthier through the elimination of the transfat and soy! To accomplish this we replaced the partially hydrogenated palm kernel oil with pure organic palm oil and we replaced the soy lecithin with sunflower oil.

All of our Taffy is Transfat Free, Soy Free & Gluten Free. Made in Florida with ingredients made in the USA!
